Different Types of Persian Saffron.

There are different types of Persian Saffron based on the market and consumer preferences. A sentence that you may see a lot on the web is “Which type of saffron is the best?” which is somehow false. All kinds of saffron can be of the best quality referring to the market and the purpose you want to use.

Sargol

“Top of the Flower”. There isn’t any yellow part in this type of saffron and it drives from the top part of the saffron threads. Persian women mostly use this type of saffron referring to their own methods of use which changed it to powder and liquid.

Negin

The threads are longer than Sargol but shorter than Super Negin and they contain some yellow parts. In comparison with Super Negin, sometimes we can say it’s lower quality.

Super Negin

This type of saffron is known as the most expensive saffron type, with long threads without any yellow parts. You can see fewer broken threads in this type of expensive saffron.

Pushal

This is the cheapest type of saffron and it’s like Mancha saffron in Spain. It consists of many yellow parts.

Bunch

We call this type of saffron “Dasteh” or “Dokhtar pich”. Dokhtar literally means girl and Pich means to wrap in Persian; it means saffron which is wrapped by girls. It has a nice and unique shape, and you can see the entire part of the saffron threads. Some believe that this type of saffron has less counterfeit.

1.How do I store saffron?
The excellent condition for keeping your saffron is in a cool and dry place, away from bright light and moisture.
If you live in humid areas, please keep your saffron in the fridge because you may find some small worms inside your valuable spice after a while!
2. What’s the Shelf Life for Saffron?
If you check all the retail boxes of saffron, you will find this product's two-year expiry date, which is true. But it’s good to know that with passing time, the scent of the saffron will increase, but the color pigments will use their strongness, so the old saffron has more aroma and less color.
3. What are the ways to use saffron in the Persian way?
The Powered Saffron
Use a mortar and pestle to grind your saffron into powder. In Persian, we use one sugar cube while grinding the saffron.
The powdered saffron has less shelf life than the saffron threads, so the Persian housewife prefers to keep her magic spice in liquid.

The Liquid Saffron
After grinding the saffron in powder, add a bit of warm water (2 to 4 tablespoons) and leave it for five minutes. Then keep the saffron in a glass jar inside the fridge. Don’t forget to keep the lid closed.
By making the saffron in liquid, you can get most of it, and it’s more economical than using the threads.
4. How much saffron should I use?
The amount of saffron you use will depend on the dish you are making. In general, you only need a small amount of saffron to impart its flavor and color. A pinch of saffron threads is typically enough for a large pot of risotto or stew.
5. How do I know if I am buying real saffron?
Saffron is a valuable spice, so it is often counterfeited. There are a few ways to check if you are buying real saffron:
  • First buy it from prominent well-known brands.."
  • Smell the saffron. It should have a strong, earthy aroma.
  • Rub the saffron between your fingers. It should have a slightly sticky texture.
  • Test the saffron's color. Saffron should turn a bright yellow color when dissolved in water.
6. How do I cook with saffron?
In Persian cooking, we mainly use saffron as a powder. However, when the Persian housewife wants to add a pinch of art to her cuisine or drinks, she adds some threads on top or in her famous tea to serve her beloved guests. Some famous cuisine with saffron are Risotto, Paella, Tahchin, Saffron milk pudding (Shole Zard). It can also be used to make saffron tea or infused in honey.
